Christmas Cookies with Ceremonial Cacao, Orange & Cinnamon

Ingredients (makes about 12–14 cookies)

  • 100 g oat or whole spelt flour
  • 40 g Sumay ceremonial cacao (finely chopped or grated)
  • 40 g coconut sugar or panela
  • 40 g coconut oil or melted cacao butter
  • 1 tsp ground cinnamon
  • Zest of ½ orange
  • 2 tbsp fresh orange juice
  • Pinch of sea salt
  • ½ tsp baking powder (optional)

Preparation

1. Preheat the oven to 180 °C.
2. In a bowl, mix the dry ingredients: flour, cacao, sugar, cinnamon, salt, and baking powder.
3. Add the orange zest and juice, then the melted coconut oil.
4. Combine until a smooth dough forms (add a little more juice if too dry).
5. Shape small balls, flatten gently, and place on a baking tray lined with parchment paper.
6. Bake for 10–12 minutes, until the edges are firm but the center remains soft.
7. Let cool and enjoy with a warm cup of ceremonial cacao.
